Sourced from the Acipenser Baerii, the Baerii sturgeon is among the most sought-after species for caviar worldwide. Originally native to Siberian rivers, our sturgeons are cultivated in pristine lake conditions, where they mature for six to seven years, reaching an ideal weight of 8 to 18 kilograms. Once harvested, the caviar is carefully salted at precisely 3.4% and allowed to mature over 8 to 10 weeks, creating a delicate yet robust flavor that leaves a lasting impression on the palate.
